Freshly smoked eels are used to make canned products. No other ingredients are added during smoking, just fresh eels and a little salt. Eels are smoked with natural alder smoke, which is used enough to make you feel the natural smoke, but not too much so as not to obscure the taste of the eel. Gelatin or a non-animal substitute for gelatin, agar, is used to make jellies.
