Only eels of a certain size are selected for smoking, ensuring that they are as uniform as possible, both in structure and fat content. No other ingredients are added during smoking, just fresh eels and a little salt. Eels are smoked with natural alder smoke, which is used enough to make you feel the natural smoke, but not too much so as not to obscure the taste of the eel.
